Mandy’s Mushroom Soup
Ingredients
½ lb of fresh Oyster mushrooms (cut into ½ inch strips)
2 or 3 small Shiitake mushrooms (thinly sliced)
2 cups boiling water
3 chicken bouillon cubes
¼ cup of chopped onion
2 or 3 cloves of garlic (finely sliced)
¼ cup of butter
3 tablespoons flour
1 cup whole milk
2 cups whipping cream (tip, get whipping cream at the big box store, the local grocery
thinks this stuff is gold, it’s like 2 bucks at the club store)
Salt and pepper to taste
Instructions
In a large saucepan, combine the mushrooms, onion and chicken bouillon in boiling water. Bring mixture to a boil, cover, then simmer for 20 min.
In another saucepan, melt the butter and blend in the flour, gradually add the milk and cream,
Cook, stirring constantly until thickened.
Add the 2 mixtures together and season.
